Tarte aux légumes et champignons

One of the most widespread urban legends in the world of cooking is that vegetables are boring. Perhaps it is influenced by the fact that since childhood we have seen them as tasteless and colorless dishes, where they almost never have the leading role. But it does not have to be so, and a good example is this vegetable cake with mushrooms. A festival of colors and flavors that mix in a fantasy dish that will delight everyone for being healthy, rich and tasty. Ideal for dinner, lunch, bring cold to a picnic or work. Take note that you start!!

Time: 60 minutes

Ingredients for 4 people:

– 1 leek

– 1 onion

– 3 carrots

– 4 eggs

– 150 gr. of mushrooms

– 200 ml. of liquid cream

– A splash of olive oil

– Salt and pepper

1⃣ Clean and chop the carrots. We put them in a pot of water and salt, and let them cook ten minutes from boiling or until we see that they are soft.

2⃣ Chop the onion, removing the outer layer, and put it on low heat in a pan with a stream of oil.

3⃣ We clean the leek, making sure that we remove the soil that accumulates at the base of each leaf. Chop and add the onion to the pan.

4⃣ Carefully clean the mushrooms. We also chop them and incorporate them into the pan. Stir from time to time so that all the vegetables are cooked evenly.

5⃣ In a bowl beat the eggs and add the cream. Beat well and season to taste.

6⃣ Incorporate the vegetables into this bowl. On the one hand the drained carrots and on the other hand the ones we have poached in the pan.

7⃣ Grease a mold with oil. Carefully pour the contents of the bowl.

8⃣ Put in the oven at 160 degrees for about 40 minutes or until a knife is inserted into the cake it comes out clean.

9⃣ Let cool outside the oven. And… ready to eat! As you have seen, it is a very simple recipe, leaving a different and healthy dish with which to amaze your guests.
