Difficulty: Low Time: 30 minutes Ingredients for 4 people:
- 180 g corn flour
- 70 g white flour
- 2 eggs
- 1 dl of milk
- 2 dl of water
- 0.5 dl blonde beer
- 20 g butter
- Butter to spread the pan
- Salt and pepper
For the filling:
- 200 gr cheese
- 250 gr of mushroom
- Spinach
Preparation:
- Mix the two flours, salt and pepper. Beat the eggs in a bowl. Add the melted butter while working, then add the mixed flour and dilute it with milk, water and beer. Work well with the spatula until you get a homogeneous paste. Let stand in a cool place for 1 hour.
- Put a non-stick pan on the fire, lightly smear it with the butter, pour a little paste and distribute it evenly in the pan with the help of a rotating movement.
- After a couple of minutes, when the edges start to brown, turn the crêpe over and cook the other side
- Repeat the operation until all the pasta is exhausted keeping the crêpes warm.
- Then fill with the spinach (previously cooked), cheese and laminated mushrooms.
- Fold the stuffed crêpe in half and serve very hot.
